Tequila Recipes To Keep You In The Summer Groove

Veggie-Packed Tequila & Lime Chili
Vegetarians can have their fun too especially with this tequila lime chili—vegetarian style. It's full of tasty vegetables and beans: onion, red bell peppers, carrots, kidney, black, and garbanzo beans. Leaning toward healthy and filling, this chili will become so addicting you'll want unlimited spoonfuls.

Ingredients:

  • 2 tbsp. olive oil
  • 1 red onion, chopped
  • 1 red bell pepper, chopped/span>
  • 2 carrots, chopped
  • ½ teaspoon salt, divided
  • 4 cloves garlic, pressed or minced
  • 2 tsp. chili powder
  • 2 tsp. ground cumin
  • 1 ½ tsp. smoked paprika
  • 1 tsp. dried oregano
  • 1 large can (28 oz.) diced tomatoes
  • 2 cups vegetable broth or water
  • 1 bay leaf
  • 2 tbsp. chopped fresh cilantro, plus more for garnishing
  • 1 1/2 cups each of cooked kidney, black and garbanzo beans (1 (15 oz.) can of each , drained and rinsed)
  • 2 tsp. lime juice
  • 1/4 cup tequila

Garnish:

  • Additional lime wedges
  • Chopped cilantro
  • Tortilla Chips
  • Sour Cream
  • Grated Cheese
  • Sliced avocado

Directions:

In a heavy-bottomed pot over medium heat, warm olive oil until simmering. Then add chopped onion, bell pepper, carrot, and 1/4 teaspoon salt. Stir mixture and then cook for 7 to 10 minutes or until vegetables are tender and onions translucent, stirring occasionally. Then add garlic, chili powder, cumin, smoked paprika, and oregano. Cook for 1 minute or until fragrant, stirring occasionally. Next, add diced tomatoes and their juices, kidney, black, and garbanzo beans, vegetable broth, and bay leaf. Stir to combine and allow the mixture to come to a simmer. Retain a gentle simmer while stirring occasionally for 30 minutes. Then remove the chili from heat. Add in chopped cilantro, salt, lime juice, and tequila and adjust to taste, add more if desired. Continue stirring. Before serving, garnish bowls with lime wedges, cilantro, tortilla chips, sour cream, cheese, or avocado.
